Baked Eggs in Avocado | 牛油果焗蛋

My nanny from the Philippines grew and brought some avocados for us last month; there were partially riped and we had to finish them before they turn bad. Aside from using these lovelies in a plate of salad, baking them is another perfect option. Eggs go well with avocados when baked; the richness when done is irresistible and makes you want more of it. See photo at the bottom for the homegrown avocados I've used for this recipe.

 

我的僱傭在菲律賓種了很多牛油果給我們吃. 那時候, 牛油果已經是半生熟, 要它們還沒有熟透之前趕快吃完. 除了用牛油果來做沙律之外, 可以焗他們來吃. 雞蛋和牛油果一起吃是非常合併的. 

Ingredients | 材料

Serves 1 (一位用)  Time required (製作時間): 15-20 minutes

190 calories per serving

1 whole avocado

eggs (free-ranged, I don't use caged)

Salt and pepper

A dash of extra virgin olive oil (optional)

 

牛油果 1隻

雞蛋 2隻

鹽和黑胡椒

特級橄欖油 少許 (隨意)

Utensils | 廚具

sharp knife (利刀)

baking tray (烤盤)

Tin foil (錫紙)

Procedures | 步驟

1. Cut avocado in half with a sharp knife, remove the core and scoop out some of the flesh, leaving enough space for the eggs.

    用利刀把牛油果切成一半, 然後把核除掉, 和挖走一些牛油果肉, 有足夠的位置放雞蛋.

 

2. Crack two eggs, one in each half of an avocado. Then place it on a tray with tin foil and pop it in the oven for 15 minutes (maximum 20 minutes) at 230°C.

    把蛋放在牛油果除了核的位置, 然後把牛油果放在一個已鋪了錫紙的烤盤, 放進焗爐大概15分鐘 (最多20分鐘), 溫度是230度左右.

 

3. Sprinkle salt and ground black pepper, then serve.

    放一點鹽和黑胡椒來調味便完成了.

Tips | 提示

1. You can add some diced mushrooms or tomatoes to your baked avocados, depending on your taste.

    在牛油果裡面你也可以放一些切了粒的番茄或蘑菇, 隨你口味.

 

2. Remember to use a sharp knife to cut the avocado in half; a blunt one might bruise the flesh and you'd get mushy avocados instead.

    把牛油果切一半的時候, 一定要用利刀. 刀不利的話, 牛油果很大機會切的過程當中會把肉搞爛.

 

3. Use the back of your knife to remove the seed; hit and twist it in clockwise direction. Using a spoon to remove the core might also bruise the flesh of the avocado.

    用刀背把牛油果的核除掉. 最容易除掉的方法就是輕力拍它, 順時針方向就可以把核拿出來. 如果用匙羹拿核出來的話, 牛油果的肉也很容易會弄壞.
