Golden Fried Rice | 黃金炒飯

Fried rice is everyone's all time favourite food. In the UK people tend to order Egg Fried Rice with Hoisin Sauce just to add a tad bit of flavour. Making a nice plate of fried rice isn't easy unless you have a proper wok, and you need to constantly flip the wok so that every single bit of rice is cooked properly and separated from each other. In this recipe, I will show you how to make some savoury golden fried rice - you don't need any hoisin sauce as it is packed with flavour and you'll be hoping for some more.

 

每一個人都很喜歡吃炒飯. 在英國, 很多我認識的人都會叫一碟蛋炒飯加海鮮醬. 去製作一碟又香又好吃的炒飯時不簡單的事, 除非你有好的中鍋, 而你能夠不停的翻鍋, 米飯才可以煮得比較香. 在這個食譜裡, 我會教你怎樣炒好一碟香噴噴的黃金炒飯. 你不需要任何醬, 因為這碟炒飯已經有很多味道, 你一定會想要更多.

Ingredients | 材料

Serves 2 (兩位用)  Time required: 20 minutes, if rice has already been cooked overnight (二十分鐘, 如果飯是隔一天煮的)
414 calories per serving.

Note: Time required is 40 minutes if rice is not cooked overnight (四十分鐘, 如果飯不是隔一天煮的)

 

1.5 cups of rice

3 cups of water

eggs (separate yolk and white)

Handful of prawns, chopped into chunks

carrot, chopped into pieces

spring onions, finely chopped

50g button mushrooms, chopped into pieces

Salt

Cooking oil

XO (chilli) sauce, optional

 

白米飯 1.5杯

水 3杯

雞蛋 5隻 (把蛋白和蛋黃分開)

多些, 斬成件

胡蘿蔔 1條, 斬成件

青蔥 2條, 切粒

纽扣菇 50克, 切片

鹽'

食物油

XO (辣椒醬), 少許

 

Utensils | 廚具

A wok (中鍋)

A spatula (鍋鏟)

saucepan for boiling rice (平底鍋, 用來煲飯)

Procedures | 步驟

For boiling the rice (I suggest you boil it the day before and place in refrigerator, see tips for reason)
煲飯 (我建議隔一天前把飯煮好, 放進雪柜)

 

1. Wash and rinse rice until water is clear. After that, place rice in saucepan and pour 3 cups of water.

    首先洗飯, 等到水變清就可. 把洗好的飯放進在平底鍋裡, 然後倒3杯水.

 

2. Add a bit of salt and stir, bring it to boil. Once it boils, turn heat down to low heat and close the lid tightly. Let it simmer for 10-15 minutes before removing the lid.

    加一點鹽然後手搞, 讓它用高火去煲. 開始滾的時候, 把火調到最低, 用蓋關好, 煮大概10-15分鐘就起蓋. 

 

3. Place cooked rice in fridge. If you want to make fried rice on the same day, leave it to rest for 5-10 minutes.

    把煮好的飯放在雪柜裡一天. 如果要立刻炒飯的話, 讓飯冷卻大概5-10分鐘.

 

 

Frying the rice

炒飯

 

1. Pour cooking oil into wok, leave it until wok is reaonably hot. Then put the rice in and fry it for about 3 minutes. During the process, add a bit of oil so that the rice has a slightly moist texture.

    放一些食物油在中鍋裡, 等到鍋比較熱就放已冷卻的米飯, 超大概3分鐘. 炒的過程中, 加一點油, 讓米飯保持一些水/油份,

 

2. When rice begins to separate from each other, add the egg yolks in and start flipping the wok, with the other hand stirring the rice with a spatula.

    飯開始一粒粒分開的時候, 加蛋黃然後開始翻鍋, 另外一個手就用鍋鏟炒飯.

 

3. When rice begins to turn golden, add in the carrots and mushroom and keep flipping the wok, or stirring it for another minute or two. 

    飯開始變金色的時候, 加已切好的胡蘿蔔和蘑菇然後繼續翻鍋, 或者用手繼續炒一兩分鐘.

 

4. Put the fried rice on one side of the wok, then on the other side of the wok add in a bit of oil and then the egg white, quickly stir the egg white so that it does not stick to your wok. When cooked, mix it with the rice and start flipping.

    把煮好的炒飯放在中鍋的一邊, 在另外一邊放一些油, 然後放進蛋白立刻炒, 避免把鍋弄壞. 蛋白煮好後, 跟飯一起炒繼續翻鍋.

 

5. Add in the prawns and continue to stir for a minute. Then add in the chopped spring onions and slightly flip the wok. Finally sprinkle some salt and XO sauce and then serve.

    加切好的蝦, 炒大概一分鐘, 然後加切好的青蔥然後翻鍋. 加一些鹽和XO醬然後就大功告成了.

Tips | 提示

1. Use rice that has been cooked overnight - this is because there is less moisture; making a nice plate of fried rice requries less moisture otherwise they may stick together as one huge lump of rice.

    用隔夜飯來做炒飯. 因為隔夜飯有少點水分, 去做一碟好吃的炒飯是應該要用少水分的飯.

 

2. The vegetables and prawns are optional; you can choose whatever you like. I add them because I prefer more colour rather than just plain gold.

    蔬菜和蝦是隨意的, 你可以用任何材料. 

 

3. If the wok is too heavy and you can't flip it, use two spatulas at the same time and start stirring. Less effort but a practical move.

    如果中鍋太重的話而你不能夠翻鍋, 一次過用兩個鍋鏟來炒飯. 這樣你不用那麼費力.
