Honey Glazed Cinnamon Apple Cupcakes | 蜜糖肉桂蘋果小蛋糕
My mum is an expert at baking these little ones. I myself am an amateur, but it somehow worked on my first go. The mixture for the cupcake wasn't hard to prepare; making these apples into the shape of a flower was not as challenging as you might've thought. This dessert still requires a certain amount of skill and accuracy, and of course, the process might take an hour or two but if you ace it, you'd be over the moon.
去做一個好吃的小蛋糕其實不太難, 最重要的就是要準確的把材料量度好. 至於蘋果方面, 很多人會以為要把蘋果變成花朵的形狀是要雕的. 真正的做法是不用雕的, 而且過程不複雜. 雖然製作時間會比較長, 但是做好後, 一定會有成功感.

For cupcake
3/4 cup or 150g of granulated sugar
1/4 cup or 110g of unsalted butter, room temperature
2 eggs
1/2 cups or 190g of cake flour
1/2 tsps of baking powder
1 tbsps of meringue powder
1/4 tsps of salt
2/3 cup or 160g of evaporated milk
1/2 tsps of vanilla extract
1 tsp of red colouring (aka red velvet)
製作小蛋糕的材料
白砂糖 3/4杯 或者 150克
無鹽牛油 1/4杯 或者 110克, 室溫便可.
雞蛋 2隻
低筋粉 1/2杯 或者 190克
泡打粉 1/2茶匙
蛋白霜粉 1湯匙

淡奶 2/3杯 或者 160克
香草精 1/2茶匙
食用色素 (紅色) 1茶匙
For apples
4 Red Washington Apples, cut into horizontal slices
10 tbsps of honey, slightly diluted with water
Cinnamon powder
Apricot jam
Premade square dough
製作蘋果的材料
紅色華盛頓蘋果 4個, 切片
蜜糖 10湯匙, 溝水

Electric hand whisk (手握攪拌器)

Note: There isn't a specific brand for the flour, vanilla extract, baking powder and meringue powder that I use - use whatever you like.
Procedures | 步驟
For cupcakes (製作小蛋糕的步驟)
1. Measure the dry ingredients (cake flour, baking powder and meringue powder) accurately, sieve it and then place in a mixing bowl.
首先必須準確的量度低筋粉, 泡打粉和蛋白霜粉, 然後篩粉, 放進一個攪拌碗裡.
2. Place butter in another mixing bowl, add sugar slowly while mixing the butter with an electric hand whisk
把牛油放在另外一個攪拌碗裡, 用手握攪拌器把牛油在攪的時候, 慢慢加糖.
3. Add eggs one at a time while whisking.
在攪拌的過程中, 先加一隻蛋. 稍後才加多一個.
4. Add the mixture of dry ingredients into the butter mixture, continue to whisk and add evaporated milk and vanilla extract.
加攪好的粉放在牛油裡面, 繼續攪, 然後才加淡奶和香草精.
5. Stop whisking, and use a plastic spatula to ensure that all ingredients are mixed well. If so, add 1 tbsp of red food colouring (or 1.5 tbsp if darker colour is preferred), then use the electric hand whisk and start whisking for a few seconds.
停止攪拌. 用一個塑料鏟繼續慢慢攪拌, 目的是要把全部的材料攪好. 攪好之後, 才加1-1.5湯匙紅色的食用色素, 再用手握攪拌器繼續攪多幾秒就可.
6. Preheat oven to 180°C, place cupcake papers in each hole of the baking tray.
將焗爐預熱到180度, 把小蛋糕紙杯放在盤子上.
7. Fill each cup 1/4 full (if you like the apples on top), or just simply 3/4 full if no apples are needed. Bake for 20-25 minutes.
如果你想小蛋糕有蘋果的話, 每一個紙杯放夠1/4的份量. 如果不是可以放3/4的份量就行. 焗大概20-25分鐘便可.
For apples (製作蘋果的步驟)
1. Slice the apples horizontally into pieces and soak them in diluted honey (basically honey with water) for 30 minutes.
把蘋果橫切, 然後浸在已稀過的蜜糖 (蜜糖加水) 大概30分鐘時間.
2. Using premade square dough, cut them into strings. Each string must be around 3-4cm thick.
使用即用方形麵團, 把它切成條. 每一條都要大概3-4cm厚左右.
3. Further cut the apple slices in half, forming a semi-circle. Spread some apricot jam on the strings of premade square dough, then place the apple slices. Note that the apple slices must (1) overlap a bit with each other and (2) cover half of the space of the dough.
再把切好的蘋果切成半, 變成半圓形. 搽一些杏果醬在已切成條的方形麵團, 然後把蘋果放在上面. 注意: 蘋果一定要 (1) 一點點重疊在一起和 (2) 在麵團上佔了半個空間.
4. Roll them up, and it should end up looking like a flower. If successful, place them on the cupcake baking tray, then place in preheated oven, 160°C for 15 minutes. Make sure the apples don't burn or lose moisture by adding a bowl of water in the oven.
捲在一起, 最後的形狀應該好像花朵一樣, 成功後, 把捲了的蘋果放在小蛋糕盤上, 然後放在已預熱的焗爐裡面, 160度焗大概15分鐘時間. 為了避免蘋果燒濃或失去水分, 在焗爐裡面加一碗水.
5. Sprinkle powdered cinnammon on top before serving.
灑一點肉桂粉在蘋果上面就完成了.
Tips | 提示
1. Remember to add a bowl of water in the oven when baking the cupcakes/apples, so that they remain moist and not overly dry.
為了保持水分, 焗小蛋糕或是蘋果之前, 記得放一碗的水.
2. You can use another type of jam to complement with the apples, for example, strawberry or blueberry jam works perfectly.
可以用藍莓醬或草莓醬來代替杏果醬.
3. For vegans: opt out butter, eggs and milk and replace with oil and soy milk.
素食者: 可以使用食物油去代替牛油和雞蛋, 豆奶來代替牛奶.
4. Less sugar is possible if you want the cupcake to be less sweeter.
如果要吃少甜的小蛋糕, 可以放少一點糖.
5. If you don't like cinnammon, another alternative is to use icing sugar.
如果不喜歡肉桂的話, 可以用糖粉來代替.
