Matcha Brownies | 抹茶布朗尼
Aren't brownies supposed to be brown and full of chocolate? Not always, especially when you don't feel like having too much chocolate! Replacing chocolate with matcha (aka green tea) powder is another prime option - the richness of the green tea and the subtle sweetness from the white chocolate mixture makes these brownies sublime! You can of course, add some pistachio nuts, or walnuts, or even chocolate buttons - this could appeal to you even more! You can browse the photos below the column 'Utensils' for the procedures.

Ingredients | 材料
Makes 9-12 brownies, depending on size. (可以做9-12塊)

50g of unsalted butter
90g of white chocolate, shredded
A handful of white chocolate buttons
30g of granulated sugar
2 eggs
50g cake flour (all purpose flour)
1 1/2 tbsps of matcha (green tea) powder
1/2 tbsps of baking powder
Walnuts (optional)
無鹽牛油 50克
碎白朱古力 90克
白朱古力豆 一些
白砂糖 30克
雞蛋 2隻
低筋麵粉 50克
抹茶粉 1.5湯匙
泡打粉 0.5湯匙
核桃 少許 (隨意)

Procedures | 步驟
1. Preheat oven to 180°C for 15 minutes.
預熱焗爐到180度, 大約15分鐘.
2. Sieve the matcha powder, baking powder and cake (all-purpose) flour in a mixing bowl.
把抹茶粉, 泡打粉和低筋麵粉一起篩, 倒進在一個攪拌碗裡.
3. Shred some white chocolate. Add the butter in a saucepan, heat it up and add the white chocolate, then remove from heat and continue stirring. Add sugar slowly.
碎一些白朱古力. 放無鹽牛油在平底鍋裡, 加碎了的白朱古力然後慢慢熱溶它. 溶了後關火繼續攪, 一邊攪一邊慢慢加糖.
4. Pour the flour mixture into the white chocolate mixture then continue mixing until the flour has been stirred well. Place two eggs and continue stirring.
把麵粉的混合物倒在溶了的白朱古力裡, 繼續慢慢攪, 放兩個雞蛋, 等到麵粉已攪好就可.
5. Once mixed, pour the mixture into the baking tray. Add a few chunks of white chocolate (up to you, really) and place it in the oven - 180°C for 20 minutes.
攪完後, 把混合物倒在烤盤裡. 如果喜歡的話, 可以放一些白朱古力, 然後放在焗爐裡, 焗大概20分鐘時間, 180度.
6. When done, sprinkle a bit of matcha powder or icing sugar as garnish, then serve. Goes well with vanilla ice cream when hot.
焗完後, 灑一點抹茶粉或者糖粉, 就大功告成了. 趁熱的時候, 可以和雲呢拿學糕一起食.
Tips | 提示
1. If you don't want your matcha brownies to become too brown, add aluminium foil on the baking tray.
如果不想把抹茶布朗尼變色, 可以把一張鋁紙封住頂.
2. To ensure a spongy brownie, yet crispy and firm texture on its top, place a bowl of water in the oven.
要把布朗尼質地鬆軟, 而有脆和實正的頂, 放一碗水在布朗尼旁邊,
3. Don't heat the white chocolate butter mixture for too long, as the butter has a lower boiling point than white chocolate, the butter will become liquefied. If that happens, remove that immediately from the heat and pour in a mixture bowl, adding sugar so as to lower the temperature and butter will no longer be liquid.
千萬別把白朱古力牛油的混合物住得太久, 因為牛油的沸點比白朱古力低. 如果牛油完全變成液體, 把它立刻倒在一個攪拌碗裡, 慢慢加糖, 溫度便會漸漸下降.
