Strawbs Scones | 草莓鬆餅
Scones for afternoon tea is pretty much a typical thing in the UK - it seems to most students that having scones with jam and cream in a 5-star hotel is 'beyond student life', but surely you can make them yourselves at home, by using main but finest ingredients you could find in your local supermarket. 600g of all-purpose flour
3 tbsps of baking powder
150g of sugar
120g of unsalted butter
100g of butter cream (you can either buy them or make them yourself, see notes on how to make butter cream)
8 strawberries, chopped into chunks
2 eggs
Tiny pinch of salt
Icing sugar

Procedures | 步驟
1. Measure 600g of all-purpose flour and 3 tbsps of baking powder, sieve them together in a mixing bowl. Then add in 150g of sugar and mix well.
量度600克的中筋粉和3湯匙的泡打粉, 然後把兩個材料一起篩, 倒在一個攪拌碗裡. 放150克的糖, 搞好便可.
2. Cut the butter into cubes and mix them with the mixture in the mixing bowl.
把無鹽牛油切成大粒, 和粉一起用手搞.
3. In another mixing bowl, pour in 100g of butter cream and an egg, whisk them together until they are properly mixed.
在另外一個攪拌碗裡, 放進100克的奶油和一隻雞蛋, 把兩個材料一起攪.
4. Before pouring the mixture of butter cream and egg into the flour, chop up the strawberries and add them into the mixture of powder.
把草莓切成粒, 然後放在粉裡.
5. Pour in the mixture of butter cream and egg into the flour and start mixing with your hands; add a bit of all-purpose flour if the dough becomes fairly sticky.
將攪好的奶油和蛋倒進麵粉裡, 然後用手開始攪, 變成麵團. 如果麵團太濕和黏的話, 可以再加多一點中筋粉.
6. Mix for about 3-5 minutes until everything is mixed well. Sprinkle some flour on your sharp knife and start cutting your dough into different shapes: squares, triangles etc.
全部的材料放在一起繼續攪3-5分鐘. 在利刀放一點麵粉然後開始切麵糰成為不同的形狀.
7. Preheat oven to 230°C for 10 minutes. Place the pastry dough on a tray; there should be a layer of tin foil on the tray before placing them on it. Brush egg wash on the layers of the pastry dough and put in oven for 20 minutes.
焗爐預熱230度大概10分鐘時間. 在預熱的時候, 將已切好的麵糰放在盆上. 盆上應該有一張錫紙. 灑一點蛋水在麵團的表面上, 然後放在焗爐裡, 20分鐘便可.
8. After 20 minutes, take the pastry out and sprinkle some icing sugar on the surface to add a tad bit of sweetness. Serve.
二十分鐘後, 把鬆餅拿出來, 然後放一點糖粉在表面上.
Tips | 提示
1. You can make your own butter cream if you cannot purchase it. Just squeeze a whole lemon (or a cup of lemon juice), 100g of milk and 5 tbps of double cream.
如果沒有奶油的話, 可以自己做. 用一個檸檬 (或者半杯檸檬汁), 牛奶100克和雙忌廉.
2. Besides using strawberries, you can use other kinds of berries, such as blueberries or raspberries. Chocolate or raisins are alternative options.
除了用草莓, 你可以用其他不同生果, 例如藍梅和紅梅等. 朱古力和葡萄乾也可以用.
3. Vegan option: just use olive oil so as to replace eggs and butter.
素食: 可以只用橄欖油取代替蛋和牛油.
4. When brushing the scones with egg wash, be sure not to drip egg wash on the tray as the bottom of your pastry will stick to the try and chances of ruining your scones is very high.
灑蛋水在鬆餅的時候, 千萬別滴蛋水在盆子上, 因為鬆餅會黏在盆子上, 而它們給弄破的機會比較大.
